“Until today” means “X was true in the past, but starting today it’s not true.” So you could say, “Until today, I was working from the kitchen table. But today I got a new desk and I love it.” That means, “In the past, I was working at the kitchen table. However, I stopped that today because I got my new desk.” I think what you want to say here is that you have always liked math (something that is true today) and you want to emphasize that today you’re very familiar with numbers. So I would say, “I have always liked math and even today I’m very familiar with numbers.” In this case, “even today” means, “You might be surprised, but this does continue to this day.”
