This is right – and you used the conditional to describe a past habitual action very well (would organize, etc)

Just one small hint. In this sentence: “If we had not held ourselves accountable for our patients’ privacy and cut corners, things would have gotten…”

In this case, you’ve got a negative (not held) and a positive (cut corners) and it’s sometimes not clear whether your “not” applies to both. For example, does that mean: “If we had not held ourselves accountable and if we had not cut corners” or does it mean, “If we had not held ourselves accountable and if we had cut corners”? In this case, it would be better to clarify, so I would write the sentence: “If we had not held ourselves accountable for our patients’ privacy and if we had cut corners, then things would have gotten messy.”

People’s lives are at risk if things are not done well. I remember working in a dental clinic. We would organize the dental charts so they wouldn’t get mixed up. If we had not held ourselves accountable for our patient’s privacy and cut corners, things would’ve gotten messy in the clinic because every patient has different treatment plans and prescriptions. I try not to cut corners working at clinics. I’d much rather prioritize quality than putting someone’s life at risk.
