Perfect example – I would just say, “…friends were going to have their wedding in Da Nang…”

Just put “had been going” into the simple past, “were going”. And since two people almost always only get married to each other once, you would say, “were going to have their wedding” instead of “a wedding.” But you could say they were going to have a dinner party, were going to have a barbecue.
